Going back on the Diet!!!

On October 15th, 2008, I made a bet with several people in the office about my weight.  At that time we had just began the Beer Belly Buster Challenge.  Rob, here in the office, bet me that I couldn’t lose 100lb in a year.  On October 15th, 2008, I weighed 330lb, and by October 15th, 2009, I’ve got to weigh 230. 

By the end of the challenge at the end of January, I weighed roughly 270lb.  So what’s happened since?  Well, I haven’t dropped anymore weight… in fact, I’m back up to around 290.  I still workout everyday with my Belly Buster Buddy, Chef Nathan.  I’m sure a good portion of the weight I’ve put back on is muscle (good weight), but I’ve also put on some of that fatty weight too…  especially in the man-boob area.  I think I’ve gone up half a cup size.

Since the end of the challenge, I started dating my way-too-hot-for-me girlfriend, Mary… and she likes to cook for me.  She is a phenomenal cook.  She makes the basin’s BEST ribs… hands down.  Needless to say, I like to eat her cooking… now I feel a little jiggly.

So this week, I’m eating some of my favorite meals one last time.  I had the ribs the other night, now I’ve got just got to have one last Winger’s wings w/ blue cheese meal and one last meal of Mary’s homemade enchilada’s.  I’ll slowly ease myself into the diet the rest of the week.  By monday, I’ll be full-board on the diet….

I’ll be eating 6-7 smaller meals throughout the day.  Eating LOTS of protein, loads of vegi’s, and no carbs after 3pm.  TONS of cottage cheese and carrots.  And roughly the same amount of exercise, I have afterall, been working my ass off in the gym every day.  Hopefully I won’t resort to chopping off body parts, but somehow, by October 15th, I’ll be down to 230.

Cheezy Spinach & Artichoke Dip

1 pkg Fat free cheese singles, swiss flavor
1/2 cup marinated artichokes, drained and rough chopped
1/4 cup fresh salsa
1 handfull fresh baby spinach
1/2 tsp garlic powder
salt and pepper to taste

Cook Pimpin’ - Carne Asada con Queso

Because guy who got skill in the kitchen, have skills with the ladies, it’s Cook Pimpin’ with Chef Nathan from the Beer Belly Buster Challenge… oh, and not to mention, these recipes are good for you, make you slim down, and therefore more attractive to the ladies.

Carne Asada con Queso (Roasted Beef with Cheese Sauce)

2 - 6 oz sirloin steaks
1/4 cup of your favorite salsa
4 slices Fat Free cheese singles
1 tsp chili powder
salt and pepper to taste
